Istrian omelette with fresh zucchini
1. Wash the zucchini, dry well and cut into thin slices. In a frying pan heat a little olive oil and fry the zucchini until they are golden. Added crushed garlic and thyme, and fry until the zucchini are brown on both sides.

2. Beat the eggs together with the parmesan, salt, a little pepper and cooking cream. If you like add some chopped parsley.

3. Take out the garlic cloves and pour over the egg mixture so that the mixture is evenly spread over the zucchini. Continue to slowly fry the Fritaja over a low flame, until it takes on a nice colour under- neath and thickens. Then turn it over (this is best done with a plate) so that the other side is baked too.

4. Serve the fried Fritaja hot or cold, cut into slices. Kids especially love this light and healthy summer meal so it is perfect light lunch which can be served with lettuce or taken to the beach as a snack.

- 6 eggs
- 100 ml cooking cream
- 100 g grated parmesan 2 small zucchini
- 2 cloves of Garlic s Olive oil
- Salt and pepper
- thyme
