Grilled gilthead and vegetables
1. Finely chop the garlic and parsley and mix with olive oil into a fine pesto and leave so that the flavours soak in.

2. Clean the fish and dry well. Season with salt and pepper. Get the fire started and place the fish on a greased grill. Grill until the fish is easily removed from the grill and turn on other side.

3. Slice the vegetables and place on the grill, season taste.

4. Fillet the fish and serve on a plate with vegetables. Season to taste with the pesto.

- 2 fresh gilthead
- 1 eggplant
- 2 zucchini
- 2 tomatoes
- Olive oil
- Garlic
- Parsley
- Salt
